We had a good week and with the cold not much going on in the gardens. I had to reschedule my monthly massage because of the ribs and was worried that I would not be sore as there was no gardening, but timely the day before massage the cooler started freezing and all the veggies had to be brought to the Birdsfoot basement. It was of course Thanksgiving day and I got a good workout moving 2000lb. All veggies are safe and happy as I am and the massage was a great success again. I highly recommend such a treat as maintenance for body and soul.
Carol and Felix have settled in and love their hay, eating about 1 1/2 bales a day. I had hoped to go to once a day milking, but Carol needs twice a day for milk quality, although she would not mind being done after 1 1/2 years of milking straight through. She is expecting in May and I plan to dry her off from milking in March. Felix is bigger and taller than her and became boss of the barn. He is still friendly, which is good since they both have large horns and it is inside the barn. They love me when I bring more hay to eat and let me pass through. They love brushing and scratching their necks, cows are fun!
I am off, back to the gardens finishing digging the last of the parsnips and more sunchokes. More snow is coming, Yeah! Next winter pick up is Wednesday 12/5/18.
Here is a recipe for the parsnips:
Oven-Fried Parsnips
- 2 pounds of parsnips
- 2 tbsp oil
- Sea salt
- Heat oven to 400 degrees. Oil two baking sheets. Cut parsnips lengthwise into 2 1/2 inch chunks, slice the chunks lengthwise into 1/4 inch thick planks, and cut planks into sticks. Toss with oil and sea salt. Spread in a single layer on a baking sheet. Bake 15 minutes; toss well and add additional salt. Continue to bake, tossing occasionally, until golden brown and crisp, about 30 minutes total. Makes 4-6 servings
